Yes, I’m about to say it. I think it is possible to get sick of that age old breakfast of bacon & eggs… . This past weekend I took a little twist on this Paleo favorite and made my own version of Bacon Egg Muffins. I made mine plain but the possibilities are endless for some extra flavor. Optional additions are spinach, peppers, onions, broccoli, tomato, raw cheese and the list goes on!
Quick & Easy Bacon Egg Muffins
Ingredients:
- 6 strips of bacon
- 6 eggs
- 1 tbsp grass-fed butter
- optional additions
Instructions:
- Pre-heat over to 350° F.
- Grease your muffin tin with your choice of fat (coconut oil, bacon fat or grass-fed butter).
- Take a strip of bacon and place one end in the bottom of the muffin tin and wrap the strip around the outside of the tin creating a base and sides for your muffins (see top left photo). Continue this with the remaining five slices of bacon.
- In a medium-sized mixing bowl scramble your eggs with a fork. If you choose to add additional ingredients, this is the time to add them! Using a large spoon or ladle fill each tin with approximately 1/4 cup of egg mixture.
- Place in oven and bake for 30 minutes or until the center is not longer gooey. Enjoy!!!!
