This sweet with a hint of spicy mango chutney is perfect for Spring!
Mango Chutney*
Ingredients:
- 1 tbsp coconut oil
- 1 red bell pepper, seeded and chopped
- 1/2 red onion, chopped
- 1 tbsp garlic, minced
- 1 tbsp ginger root, minced
- 1 tbsp curry powder
- 1 tsp red pepper flakes
- 2 mango, chopped
- juice from 1 1/2 lime
Instructions:
- In a large frying pan, heat coconut oil over medium heat.
- Add garlic and ginger to the pan and saute for 2 minutes.
- Add red onion and red bell pepper to the frying pan and continue to saute for another minute.
- Add the chopped mango, lime juice, curry powder and red pepper flakes.
- Continue to saute until the red pepper, onion and mango have softened. About 5 minutes.
- Turn heat down to simmer and cover with a lid until serving. (Also is good served cold)
