Mango Chutney

This sweet with a hint of spicy mango chutney is perfect for Spring!

Mango Chutney*

Ingredients:

  • 1 tbsp coconut oil
  • 1 red bell pepper, seeded and chopped
  • 1/2 red onion, chopped
  • 1 tbsp garlic, minced
  • 1 tbsp ginger root, minced
  • 1 tbsp curry powder
  • 1 tsp red pepper flakes
  • 2 mango, chopped
  • juice from 1 1/2 lime

Instructions:

  1. In a large frying pan, heat coconut oil over medium heat.
  2. Add garlic and ginger to the pan and saute for 2 minutes.
  3. Add red onion and red bell pepper to the frying pan and continue to saute for another minute.
  4. Add the chopped mango, lime juice, curry powder and red pepper flakes.
  5. Continue to saute until the red pepper, onion and mango have softened. About 5 minutes.
  6. Turn heat down to simmer and cover with a lid until serving. (Also is good served cold)
