Week 3 of Gather: The Experience brings us 2 recipes in 1! Yay! I haven’t made very many pork recipes for the site though it is by far my favorite meat so when I saw this recipe I thought it would be a fantastic fit. I’m sure you’ll enjoy the great flavors that these recipes offer!
Apple-Glazed Pork Loin
Ingredients:
- 2 tbsp spicy brown mustard
- 1/2 cup fig balsamic vinegar
- 5 pound pork loin
- salt & pepper to taste
- 2 cups Honeycrisp Applesauce (see below)
Instructions:
- To make the marinade, in a small bowl, whisk together the mustard and vinegar until smooth. Refrigerate until ready to use.
- Preheat your oven to 350 degrees. Place the pork loin in a large baking dish, fat side up. Sprinkle the pork generously with salt and black pepper. Baste with mustard marinade. Bake pork loin 25 minutes per pound at 350 degrees.
- After 45 minutes, baste the pork with the marinade, and pour 2 cups of applesauce over it. If it starts to burn, tent the pork with foil. Continue to bake until the pork reaches 170 degrees internally on a meat thermometer. Slice, and serve the pork loin with the applesauce.
Serves 12
Honeycrisp Applesauce
Ingredients:
- 4 honeycrisp apples, cored
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1 cinnamon stick
Instructions:
- Cut the apples into chunks, discarding the cores. Place the apple pieces into a food processor or high-speed blender. Add the cinnamon and nutmeg, and pulse the apples until the are mostly smooth, but still slightly chunky (I added 1 tbsp of water to help puree).
- Place the the pureed apples along with the cinnamon stick into a slow cooker, and cook on high for 1 hour. Stir the apples, set the temperature to low, and cook for another hour. Remove the cinnamon stick, and serve the applesauce warm.
